Welcome back to the blog! Here at the farm, we live and breathe matcha. We know that for many, stepping into the world of matcha can feel overwhelming. There are so many terms, colors, and prices. The biggest question we get is always: "Which matcha grade should I choose?"

To make it simple, we love to use an analogy most people understand: coffee. You know the difference between a quick diner coffee, a reliable blend, and a premium, single-origin bean. Matcha is exactly the same.

Let’s decode our grades by comparing them to your favorite brew, so you can find your perfect match.

1. Matcha DAILY: The Robust Wake-Up Call (Your "Robusta")

Think about your first cup of the day—perhaps a bold Robusta blend. It's strong, maybe a little bitter, very high in caffeine, and designed to get you moving. It’s not about delicate notes; it’s about a kick.

Our Matcha DAILY is our robusta. It is harvested from later tea pickings, meaning the leaves have soaked up more sun. This results in a slightly bitter, punchier flavor profile and a color that is a less intense, slightly yellowish-green.

  • Best For: Smoothies, lattes (where it must cut through milk), baking, and energy shots.


2. Matcha BUSHI: The Balanced All-Rounder (Your "Robusta-Arabica Blend")

Now, think of a good, reliable coffee blend you might buy for your drip machine. It uses Arabica beans for smoothness and flavor, but blends in Robusta for body and consistency. It’s smoother than pure Robusta, but still bold enough to enjoy with milk.

Our Matcha BUSHI is this versatile blend. It is a "culinary-ceremonial" hybrid. We use a mix of leaves to create a matcha that is smoother than Daily, with a brighter, more vivid green color and less bitterness. It’s sophisticated enough to whisk on its own but affordable enough for a premium everyday latte.

  • Best For: High-end lattes, iced matcha, or as a smoother introduction to traditional whisked matcha.


3. Matcha SHOGUN: The Pure Experience (Your "100% Arabica, Single-Origin")

Finally, imagine the coffee lover’s dream: a pure 100% Arabica, single-origin bean, lightly roasted. You drink this black. Why? Because you want to taste the delicate, complex notes—the floral, nutty, or fruity flavors that disappear if you add milk or sugar. It is smooth, mellow, and purely about the flavor experience.

Our Matcha SHOGUN is our 100% Arabica. It is a true "Ceremonial Grade." Shogun is made from the youngest, sweetest, first-harvest leaves, shaded perfectly to maximize chlorophyll and L-theanine (the compound responsible for calmness and focus). It has almost zero bitterness, is incredibly smooth, and possesses a vibrant, electric emerald-green color. It must be prepared traditionally with water and a whisk.

  • Best For: Traditional Usucha (thin tea) preparation, special occasions, and ultimate relaxation.
